hi, my name is joseph.

I've been a pastry chef for 47 years.

I left home in India at 17 to learn pastry, and the craft has carried me from Bahrain to Vienna, where I fell in love with Viennoiserie, then on to Melbourne and finally Sydney, where I was head pastry chef at The Westin.

These days I teach at Le Cordon Bleu, passing on the art of pastry to young, vibrant people. Baking, for me, has always been a creative pursuit. It settles the mind, rewards patience, and gives me something beautiful to share with the people I love.

Most weekends you'll find me at home with a batch of sourdough and croissants on the go. But my great obsession is panettone, which I bake and sell each Christmas. It's a demanding three-day process, but I love the science behind it as much as the craft, and there's nothing quite like the joy it brings to the people who receive one.
